There are several programs that produces such images, perhaps the most extended one would be Adobe PhotoShop.

I included a Lab sample in the demo of the lcms package. This demo also displays such images using icc profiles and tifflib. If you are interested: http://www.lcms.coloraid.de - The library is free and open source.
